Recipe from a friend

Ingredients:

  • 2 Quarts water
  • 1 Pumpkin*
  • 2 Stalks Celery, sliced
  • 3 Large Carrots, sliced
  • 2 Turnips, pared and cut into small pieces
  • 2 Parsnips, pared and cut into small pieces
  • 3 Potatoes cut into cubes (save for last)
  • 3 Ounces uncooked rigatoni or any other pasta of your choice. (save for last)
  • 1 Chpped onion
  • 2 cloves garlic, minced
  • 2 packages of soup broth
  • Oil, salt and other spices of your choice

 

Directions:

In a large saucepan over medium heat, combine begetables (except potatoes) and packages of soup broth.

In another pot bring peeled pumpkin to a boil. Cook until tender.

Put it in a blender or food processor until it becomes a thick liquid. Add to vegetables. Add potatoes.

Sautee onions, garlic, salt and other spices in hot oil. Add to the soup.

Add pasta cook until done.
