Roasted Tomato Rotini

Ingredients:

  • 1/2 lb Rotini (uncooked)
  • 1/2 cup water
  • 1 tbl vegetarian chicken broth (dry)
  • 1 tbl olive oil
  • 2 cloves garlic, finely chopped
  • 8 roma (plum) tomatoes, cut into quarters
  • 1 medium onion, cut into wedges
  • 1/4 cup chopped fresh basil
  • Vegan Parmesan cheese, optional

Directions: Cook rotini as package directs; drain. Preheat oven to 400 degrees. In small saucepan, combine water, oil, vegan chicken seasoning and garlic; heat until seasoning dissolved. In shallow baking pan, combine tomatoes, onion and bouillon mixture; stir gently. Bake 30 minutes or until vegetables are tender, stirring occasionally. Toss vegetables with hot rotini and basil. Garnish with vegan Parmesan cheese (optional).
